Easy Fajita Style Quesadillas – Eat Healthy, Eat Like A Man
Everyone is in a rush during the week, but that doesn't mean you have to sacrifice and eat like garbage. These easy chicken quesadillas are a quick and delicious solution.
One food that everyone seems to love is Tex-Mex. South Western flavor seems to be one of America's favorites, and for good reason. It's delicious. You can do this mild or as crazy hot as you want, but a nice medium heat is always a crowd pleaser. These particular quesadillas are more a flavorful mild dish, but feel free to kick them up a notch if you want.
As a fan of all kinds of Mexican style foods, it's fun to combine them. Quesadillas are an easy way to incorporate pretty much any food that you want into an easy to make sandwich of sorts. This will be the perfect combination of fajita flavor, but quesadilla style.
So here is what you'll need in order to put this together:
- 1lb boneless skinless chicken breast
- packet of McCormick Mojito Lime marinade
- 1 red bell pepper
- 1 medium onion
- Pack of Mexican blend cheese (or just cheddar works too)
- Large flour (or whole wheat) tortillas
- Olive Oil
The first thing you'll want to do is mix up the marinade. Not rocket science, just read the back of the packet. Sure you can make your own marinade, but they have already put all the ingredients together for you. Remember, this is suppose to be easy.
Next cut the chicken into small cubes, put them into a container of ziplock bag and dump in the marinade. Let that mesh together for 15 minutes or so. While thats getting delicious cut up your pepper and onion into strips. Heat up a skillet with a little olive oil, and saute the veggies until soft.
Set the veggies aside, then put the chicken into that same pan (dump all the marinade in too). Cook that all the way through. You'll need another pan to cook the actual quesadillas, so get that out and make sure it's big enough for the tortilla to sit flat. Heat that at medium heat, lightly grease it and lay down a tortilla.
Sprinkle a generous amount of the cheese on the quesadilla to cover the top. Let that melt a bit. then start adding your chicken and veggies. All on one side though, you'll need to fold these babies over. It will take about 3 minutes per quesadilla, and 2 per person should do the trick. You can even make some Spanish style rice on the side if you like.
Remember, you don't have to chow down on celery and rice cakes to eat healthy. Fresh ingredients, and some good decisions can make all the difference.
